An (Nam)amazing recipe hack!

To those who tried Royce’ Nama Chocolate can easily say that it’s one of the best forms of chocolate that ever existed. These little cubes are rich, smooth and soft enough to melt in your mouth.

We have good news for you. Whenever your craving for Nama Chocolate, you can easily make a batch at the comfort of your home! Here’s a simple recipe hack that you can try for yourself or you can even make a batch and have it as a gift to your loved ones.

What you need:

  • 400g good quality dark chocolate (70% cacao)
  • 200ml (3/4 cup + 1 tbsp) heavy whipping cream
  • 1 tbsp liqueur of your choice (optional)
  • unsweetened cocoa powder

Procedures:

  1. Chop chocolate into smaller pieces for it to melt faster and more evenly.
  2. Place parchment paper onto a baking dish (preferably 20cmx20cm baking dish size).
  3. In a saucepan, add heavy cream and let it semi boil in a medium heat. Whisk it evenly.
  4. When you see small bubbles around the saucepan, remove from the heat. 
  5. Add sliced chocolate into the heavy cream and stir to combine.
  6. Mix the chocolate and cream until there are no lumps. The chocolate should be completely smooth.
  7. If you like, add liqueur of your choice. 
  8. Pour the mixture into your prepared baking dish and smooth the surface with a spatula.
  9. Tap the baking dish onto the counter a few times to evenly distribute the chocolate mixture.
  10. Place it in your refrigerator and let it chill for about 4 to 5 hours.
  11. After chilling for 4 to 5 hours, remove the chocolate from the baking dish. 
  12. Cut the excess chocolate around the edges to have nice sharp corners.
  13. Warm up a sharp knife with a hot towel and cut the chocolate into 1” strips. Make sure to constantly clean and warm your knife before each cut to achieve a nice sharp cut. Then cut the strips into cubes. 
  14. Sprinkle cocoa powder on top. If you want all sides to have cocoa powder, you may dip in cocoa powder to coat all sides. 
  15. Serve in a plate and enjoy!

For the matcha lovers, this one’s for you! Instead of dark chocolate, you can have an option of making matcha flavored nama chocolate!

What you need:

  • 400g white chocolate
  • 125ml (1/2 cup) heavy whipping cream
  • 25g (2 tbsp) unsalted butter
  • 2 tbsp. matcha powder

Procedures:

  1. Chop white chocolate into smaller pieces for it to melt faster and more evenly.
  2. Cut the butter into small pieces.
  3. In a saucepan, add heavy whipping cream and let it semi boil in a medium heat. Whisk it evenly.
  4. When you see small bubbles around the saucepan, remove from the heat. 
  5. Immediately, add white chocolate and butter. Mix them all together. 
  6. Once it’s smooth, sift matcha powder into the mixture. Mix and combine together.
  7. Place parchment paper onto a baking dish (preferably 20cmx20cm baking dish size).
  8. Pour the green tea chocolate mixture into the baking dish.
  9. Tap the baking dish onto the counter a few times to evenly distribute the chocolate mixture.
  10. After chilling for 4 to 5 hours, remove the green tea chocolate from the baking dish. 
  11. Cut the excess chocolate around the edges to have nice sharp corners.
  12. Warm up a sharp knife with a hot towel and cut the chocolate into 4 blocks then cut each block into 9 small pieces. 
  13. Dust matcha powder on top of the chocolate.
  14. Serve in a plate and enjoy!
