Another famous dish that you can recreate at home!
We were so happy when Panda Express announced last April that we can now enjoy their famous dishes at home because they’re open for delivery! But if you’re up for the challenge, why not recreate their famous and iconic Orange Chicken!
We found this recipe from Joshua Weissman.
Ingredients:
For the sauce:
- 3/4 cup (170g) sugar
- 3/4 cup (180ml) white vinegar
- 1/3 cup plus 1 tbsp (90ml) soy sauce
- 1/4 cup (60ml) water
- Zest and juice of 1 orange
- Saixing wine (traditional Chinese wine) – optional
- Chinkian vinegar (black vinegar) – optional
- 1 tablespoon (10g) cornstarch + 1tbcp water = slurry
- 4 cloves garlic, grated
- 2 inch knob ginger, grated
- 1-2 red chilies, finely minced
For the chicken:
- Chicken thighs
- 2 eggs
- Salt
- MSG – optional
- 1 cup (140g) cornstarch
- 1/2 cup (75g) all purpose flour
Procedure
- Start with the sauce – in a medium pan, combine sugar, white vinegar, soy sauce, water, zest and juice of 1 orange. Mix them all together and bring it up to a high heat for it boil.
- OPTIONAL: Once it comes to a boil, reduce to medium heat and let it simmer. Add in a splash of saixing wine (traditional Chinese wine) and chinkian vinegar (black vinegar)
- In a separate bowl, combine cornstarch and water until thoroughly mixed for your slurry then whisk it in your sauce. Let it simmer for about 1 to 2 minutes or until it thickens up.
- Immediately, add in the grated garlic, ginger and finely minced chilies. Let it steep and you’re done with the sauce.
- Next up is your chicken – cut your chicken thighs into bite-sized pieces. Lightly season them with salt and MSG (optional).
- In another bowl, add cornstarch and all purpose flour. Whisk them together until fully combined.
- In a separate bow, whisk together 2 eggs with a splash of water.
- Set up your chicken stations (dry mixture, wet ingredients and your chicken) in a line.
- Toss a handful of chicken into the flour/cornstarch mixture. Once evenly coated, toss them into the egg mixture and then toss them back to the flour/cornstarch mixture. Make sure there are no wet spots. Repeat until all of your chicken pieces are coated.
- Fill in a large pot with oil, around 3 inches deep, and preheat it to 375F.
- Once it’s hot, fry your chicken in batches for around 3 to 5 minutes or until light golden brown. Then, set them aside to cool.
- Place the chicken in a large bowl and drizzle your orange sauce.
- Toss them together until each piece is fully coated with the sauce.
- Place them in a nice serving bowl and add some finely sliced green onion or chilies (totally up to you!) for garnish.
- Serve and enjoy!
