Refrigerator cakes or icebox cakes have been a staple Filipino dessert and a favorite among those who have a sweet tooth and those who love cold desserts.

If you think that the best way to beat the heat and to satisfy your sweet cravings is by enjoy refrigerator cakes, we suggest you create these 5 must-try refrigerator cake recipes.

Mango Refrigerator Cake

Here’s a modified recipe from Panlasang Pinoy:

Ingredients (for two layers):

  • 1 tbsp crushed graham
  • 20 pcs. graham crackers
  • 1 cup of all-purpose cream
  • 3/4 cup condensed milk
  • 2 cups thinly sliced mango

Procedure:

First, in a bowl, combine and mix well the all purpose cream and condensed milk.

To assemble, in a rectangular dish, arrange 8 to 10 pcs. of graham crackers, then layer the cream mixture on top. Finally, layer the mangoes evenly in the cream.

Repeat the layering until you’re satisfied.

You may garnish the top layer with mango and crushed graham before you chill the cake in the refrigerator for 3 hours.

Fun addition: Peaches! For that peach mango flavor we've grown to love. 
Also, instead of mangoes, you may use your favorite ripe fruit. 

Fruit Cocktail Refrigerator Cake

Here’s a recipe from Kawaling Pinoy:

Ingredients (good for 6 servings):

  • 2 cans (15 oz. each) all-purpose cream
  • 1 can (14 oz.) cold condensed milk
  • 18 pcs. graham crackers
  • 1 can (30 oz.) drained fruit cocktail

Procedure:

In a bowl, combine the all-purpose cream and condensed milk. Beat the mixture until it begins to thicken and eventually double in volume. Set aside.

In an 8 x 8 baking dish, arrange one layer of graham crackers, then 1/3 of the cream mixture, and finally the fruit cocktail.

Keep adding layers until the dish is filled.

Cover the dish with plastic film and refrigerate overnight. If you want a colder cake, freeze the cake for about 1 hour before serving.

Banana Kitkat Refrigerator Cake

Here’s a recipe from BiteSized PH:

Ingredients (good for 6 servings):

  • 12 pcs. graham crackers (crushed)
  • 3 tbsp. melted butter
  • 1 tbsp sugar
  • 2 pcs. ripe banana (sliced)
  • 1 pack (250 ml) Nestle All Purpose Cream
  • 2/3 cup condensed milk
  • 2 packs of 4 finger KitKats (crushed)

Procedure:

For the crust, mix the graham crackers, butter, and sugar in a bowl.

For the cream mixture, in a separate bowl, whip the all purpose cream until it’s light and fluffy. Then, fold in a mixture of crushed kitkats and conensed milk in the whipped cream.

To assemble, in a serving dish, layer the graham crackers, then sliced banana, and half of the cream-Kitkat mixture.

Keep layering until the dish is full. Feel free to top the cake with more crushed Kitkats.

Refrigerate overnight before serving chilled.

Fun change: You may also use strawberries instead of bananas. 

Cappuccino Refrigerator Cake

Here’s a recipe from Kitchen Nostalgia:

Ingredients (good for 12 servings):

  • 3 tbsp. instant cappuccino mix + 2 tbsp. water or milk
  • 2 cups whipping cream
  • 2 cups Greek yogurt
  • 2 tsp. vanilla extract
  • 4 tbsp. brown sugar
  • about 300 g (10.5 oz) graham crackers
  • 5 tbsp. instant cappuccino mix + 1/4 cup warm milk for soaking crackers

Procedure:

For the cream:

In a large bowl, mix whipping cream until soft peaks form. In the same bowl, add the 3 tbsp. instant cappuccino mix+ 2 tbsp. water/milk mixture, Greek yogurt, vanilla extract, and brown sugar.

For the crackers:

In a shallow dish, combine the 5 tbsp. instant cappuccino mix + 1/4 cup warm milk. Soak each graham cracker in this mixture before placing it in the pan.

For the assembly:

Place a layer of the soaked graham crackers in an 8 x 8 pan.

Then add 1/3 of the cream-yogurt mixture on top of the crackers.

Keep layering until you’ve filled the pan.

Cover with plastic wrap and chill for at least 2 hours.

Fun addition: You may lightly dust the top with cocoa powder for decoration before serving. 

Oreo Refrigerator Cake

Here’s a recipe from Chocolate, Chocolate, and More:

Ingredients:

  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 35-40 Oreos

Procedure:

In a large bowl, beat whipping cream until soft peaks form. Then gradually add powdered sugar to the cream and continue mixing until stiff peaks form. Be aware not to over mix.

To assemble, line the bottom of a square dish (8 x 8) with Oreos first then pour half of the whipped cream over the oreo layer.

Keep layering until the dish is filled.

Once finished top the cake with 3-4 chopped Oreos for garnish and loosely cover with foil.

Refrigerate for 4-6 hours before serving.

Fun change: You may replace Oreos with your favorite cookies like chocolate chip cookies, graham crackers, chocolate wafers, etc.
