Anna Princesa (yup, real last name) not only did this, but she went from entertaining an idea to opening night in <strong>less than a month.<\/strong><\/p>\n<h2><span style=\"text-decoration: underline;\">Food-filled childhood<\/span><\/h2>\n<p>Anna, a recent graduate of UP, has <strong>always had a soft spot for food<\/strong>. To put simply, <strong>food\u2014whether eating it, preparing it, or going to the market for it\u2014was a part of Anna&#8217;s upbringing<\/strong>.<\/p>\n<blockquote>\n<h3 style=\"text-align: right;\"><em>&#8220;You can tell a lot about a person based on their food choices&#8221; &#8211; Anna Princesa<\/em><\/h3>\n<\/blockquote>\n<p>&nbsp;<\/p>\n<p>To show just how often Anna had food on her mind, in college she wrote her senior thesis on the topic\u2014<em>Sugar and Spice: An Afternoon Delight<\/em> was a study on food and its ability to represent certain aspects of life. &#8220;I branded certain dishes as sacred because of the memories I associated them with. His only condition? This was July 2, 2016 and the&nbsp;park had set the date for the grand opening: July 23.<\/p>\n<h2><span style=\"text-decoration: underline;\">Hi-ho, hi-ho, it&#8217;s off to work we go<\/span><\/h2>\n<p>Tossing menu ideas back and forth, Anna&#8217;s family played guinea pig to her experiments in the kitchen.<\/p>\n<p>&nbsp;<\/p>\n<blockquote>\n<h3 style=\"text-align: right;\"><em>Childhood summers in Bicol weren&#8217;t complete without trips to the market and coming home to lola&#8217;s Bicol express.<\/em><\/h3>\n<\/blockquote>\n<p>&nbsp;<\/p>\n<p>She was, after all, <strong>reinventing some of the dishes that she and her cousins had grown up eating<\/strong>.<\/p>\n<p>Childhood summers in the province were not complete without trips to the market and coming home to her lola&#8217;s recipe for Bicol express waiting for the cousins.
