Your Local\u00a0<\/strong>has been\u00a0a mainstay in\u00a0our top 10\u00a0most loved restaurants in Metro Manila\u00a0ever since it opened. So when news came out that Chef Nicco Santos<\/strong> and the rest of the team behind Your Local were opening a new restaurant concept, we just\u00a0have<\/em> to tell you all about it.<\/p>\n

This new restaurant will focus on bold and fresh Peranakan\u00a0cuisine, <\/strong>which is uniquely characterized by\u00a0blending Chinese ingredients with various distinct spices and cooking techniques used by the Malay\/Indonesian community.<\/p>\n

Knowing Chef Nicco and his style of cooking, we are already excited\u00a0to see and taste distinct Southeast Asian dishes made with ingredients we’ve\u00a0never heard of before.\u00a0Take a sneak peek at some of the dishes you’ll get to try!<\/p>\n

Kambing Buah Keluak<\/h2>\n

Goat meat, buah keluak (a poisonous fruit from Malaysia made edible by fermentation), belachan (shrimp paste), chips and nasi kerabu (Malay rice).<\/em><\/p>\n

Bunny Chow<\/h2>\n

A popular South African fast food dish consisting of a hollowed out loaf of bread filled with curry. In this case, it’s lamb curry!<\/em><\/p>\n

Wild Boar Char Siu with Iberico Glaze<\/h2>\n

Tempeh<\/h2>\n

Tempeh, or more popularly known as\u00a0tofu’s weird-but-cool cousin, is food made from soybeans that originated in Indonesia.<\/em>\u00a0So yes, these beef like cubes are actually vegetarian.\u00a0<\/em><\/p>\n

Dirty Duck Rice<\/h2>\n

Duck in house soy served with herbed rice<\/em><\/p>\n

Shime Saba Nigiri<\/h2>\n

Torched or aburi shime saba cooked in house soy garnished with Gotu Kola,\u00a0an herbal plant native to Asia.<\/em><\/p>\n

Duck Meatballs<\/h2>\n

Isaan-style cooked duck meatballs. According to our research, Isan or Isaan (Thailand’s\u00a0largest region) food is a distinct local style of cooking in northeastern Thailand in which glutinous rice and chili peppers are prominent.\u00a0<\/em><\/p>\n

FUN FACT:\u00a0<\/strong>The restaurant name came from the \"friendly greeting uncles and aunties would give to customers lining up for food in Singapore\", as reported by CNN Philippines.<\/pre>\n
Chef Nicco also wanted to make sure he and the rest of their team could interact with guests freely. That’s why the decor boasts of an open kitchen and bar, as well as communal tables<\/strong>.<\/p>\n
