Passion by Gérard Dubois – Now closed
Gérard Dubois, a Swiss-born pastry chef, started his pastry empire with La Rose Noire back in 1991 in Hong Kong. From a 30-seater restaurant and cake shop serving just 28 varieties of French breads and pastries, La Rose Noire has now over 800 listed items and is one of the biggest wholesalers of specialty food items fulfilling needs of businesses in over 40 countries across 5 continents.
By 2012, Gérard opened his first Passion shop in Wan Chai, Central in Hong Kong, which marked his return to the retail market. Passion by Gérard Dubois is a French bakery, deli, patisserie and cafe serving freshly baked specialty breads and a full line of French pastries and desserts. Currently, it stands at 5 branches spread across Hong Kong with the latest one being in Macau–all of which are supplied by La Rose Noire.

Specialty Bread
Passion is known for its signature crusty sourdough bread and Passion baguettes. All breads are baked in-house through a traditional stone oven, using only imported French flour of the highest quality.
Aside from their breads, Passion prides itself in serving a wide collection of traditional yet trendy croissant and Danish pastries, French pastries, confectionery, sandwich, salads, and specialty drinks.

Beverage choices include espressos, teas, and juices but their bestselling drink is the Valrhona Chocolate Drink or the “Chocolate Chaud,” a creamy dark chocolate drink which comes with the fruity taste of a raspberry. It is meant to be enjoyed by dipping said fruit into the rich cup of chocolate, blending the dark tones of chocolate with the fruit.

Passion Cafe for brunch? Choose from their sandwiches which are made from only the freshest ingredients. If you’re on health watch, indulge in Passion’s healthy salads so you’ll never have to count those calories again. You can also enjoy a casual yet exquisite dinner with their evening menu where hot casseroles of stews, freshly-baked sourdough pizzas, and cold cut platters take center stage. These go perfect with Passion’s wines and bottled beers imported from France.
Gérard is also an award-winning author. His book, Crafted Passion, was awarded “Best Dessert Book in the World” by the 17th Gourmand Awards in Paris in 2012. He has a number of other award-winning cookbooks under his belt and is set to release a new book this year to commemorate La Rose Noire’s 25th anniversary.
