During the lockdown, most of us have picked up new hobbies and even a new hangout spot at home – the kitchen. Either cooking and/or baking for an online business or simply experimenting on new and trending recipes, we’re always open to try new things! For the bakers out there, have you ever tried making Mochi Cookies?
Mochi cookies are actually quite popular in Korea that you can easily buy these in their supermarkets! You simply have to look for Cheongwoo’s Chocolate Chip cookies with a surprise mochi filling in the middle. Since we won’t be able to go to Korea anytime soon, you can easily recreate these at the comfort of your home. Plus, you can add matcha powder to take these mochi cookies to another level!
What you need to make chewy Matcha Mochi Cookies:
For the mochi
- 1/2 cup glutinous rice flour
- 1 tbsp cornstarch
- 1/2 tbsp sugar
- 1 cup milk
- 1 tbsp butter
For the cookies
- 3/4 cup butter
- 3/4 cup light brown sugar
- 1 and 2/5 cups all purpose flour
- 1.5 tbsp matcha powder
- 1 cup of dark chocolate chips or a dark chocolate bar (roughly copped)
- 1 tsp baking powder
- 1 egg
Procedure
- Make your mochi filling first – in a bowl, mix glutinous rice flour, cornstarch, sugar and milk together and seal with a plastic wrap on top. Poke holes into the wrap for ventilation.
- Pop the mix into a mircowave for 2 mins and 45 seconds.
- Add in 1 tbsp butter into the mix and gently fold in with a spatula.
- Seal the mochi mix with a plastic wrap. Place in a fridge for 30 minutes to chill.
- Time to make your cookie batter – in a bowl, stir the butter until it’s smooth then add brown sugar and baking powder.
- Sift in flour and matcha powder and mix until evenly combined.
- Add in the egg and mix well.
- Cover the bowl with plastic wrap and let it sit in the fridge for 30 minutes.
- Preheat the oven to 375F then place parchment paper on baking sheets.
- While waiting, roll out small balls from the mochi mix (use plastic gloves for this since the mix is very sticky)
- Roll slightly larger balls from the cookie batter then have them beside your mochi ball counterpart.
- Flatten the cookie batter out and place the mochi ball inside then bring the edges over until the mochi ball is covered by the cookie batter.
- Press in chocolate chips or chunks into the cookies.
- Bake these for 12 minutes and let them cool for about 5 to 8 minutes.
- Take your cameras, snap some photos for the gram and enjoy!
