With inuman comes pulutan.

We all love a good drink. No matter what the occasion, a night out is always the appropriate answer. But for us Filipinos, an inuman never means just drinking. Because we NEED our pulutan. We all have our pre-game go-tos, our mid-drink favorites, and the usual pulutan that we munch on and completely forget the next day.

So once you bring out the gin, wine, beer, tequila, or whatever your heart desires, get the bar chow prepared as well. Here are the 5 most common and most loved pulutan food we always look for.

5. Sisig

Us Filipinos have found the secret of the universe, which is that chop-chopped pig head is the bomb.dot.com. Mixed with onions and chili peppers, a little topping of chicharon, calamansi + toyo (and for some, mayo), and you’ve got a sizzling platter of heaven.

4. Tokwa’t Baboy

Tokwa’t baboy (tofu and pork) is a serving of pork ears, pork belly, and deep-fried tofu, usually with a bowl of soy sauce, vinegar, white onions, and red chili peppers. And that bowl can either be sauce or soup for your tokwa’t baboy, and that’s nothing to apologize for.

3. Papaitan

Like a number of Filipino specialties, papaitan is a polarizing dish. It’s an Ilocano soup made out of goat innards, chili peppers, and bile. Yup, bile. It’s the juice extracted from the gallblader that makes it pait i.e. bitter. While it may be ironic, this sketchy mix of ingredients actually aids digestion.

2. Chicharon

Chicharon is our take on fried pork belly or fried pork rinds (i.e. chicharon baboy). Coming in bulaklak, bituka, and other beautiful forms, chicharon is always enjoyed with a side of vinegar (and some sili if you’re naughty).
