Here’s what we know so far.

Your Local has been a mainstay in our top 10 most loved restaurants in Metro Manila ever since it opened. So when news came out that Chef Nicco Santos and the rest of the team behind Your Local were opening a new restaurant concept, we just have to tell you all about it.

This new restaurant will focus on bold and fresh Peranakan cuisine, which is uniquely characterized by blending Chinese ingredients with various distinct spices and cooking techniques used by the Malay/Indonesian community.

Knowing Chef Nicco and his style of cooking, we are already excited to see and taste distinct Southeast Asian dishes made with ingredients we’ve never heard of before. Take a sneak peek at some of the dishes you’ll get to try!

Kambing Buah Keluak

Goat meat, buah keluak (a poisonous fruit from Malaysia made edible by fermentation), belachan (shrimp paste), chips and nasi kerabu (Malay rice).

Bunny Chow

A popular South African fast food dish consisting of a hollowed out loaf of bread filled with curry. In this case, it’s lamb curry!

Wild Boar Char Siu with Iberico Glaze

Tempeh

Tempeh, or more popularly known as tofu’s weird-but-cool cousin, is food made from soybeans that originated in Indonesia. So yes, these beef like cubes are actually vegetarian.

Dirty Duck Rice

Shime Saba Nigiri

Torched or aburi shime saba cooked in house soy garnished with Gotu Kola, an herbal plant native to Asia.

Duck Meatballs

Isaan-style cooked duck meatballs. According to our research, Isan or Isaan (Thailand’s largest region) food is a distinct local style of cooking in northeastern Thailand in which glutinous rice and chili peppers are prominent.

FUN FACT: The restaurant name came from the "friendly greeting uncles and aunties would give to customers lining up for food in Singapore", as reported by CNN Philippines.

Chef Nicco also wanted to make sure he and the rest of their team could interact with guests freely. That’s why the decor boasts of an open kitchen and bar, as well as communal tables.
