At Holy Smokes, Pitmaster Juano Gutierrez smokes the meat for 12-16 hours using local fruit woods, while Chef Red Espiritu makes the in-house BBQ sauces, bar chow, and sides.
Insider Tip: The owners recommend pairing the chicken with Cajun rice and creamed corn and the beef ribs with brioche, pickles, and onion.
