Coffee is more than a pick me up. For cafes that are “third wave”, it means that the coffee is made out of high-quality beans, and that they are meant to be appreciated like fine wine. It’s more than a press of a button on the coffee machine, a feature that is considered “second wave” (with “first wave” being instant coffee). Outside of pressing a button to grind the beans, every step of the way is carefully handcrafted.
If you don’t quite understand the process or know what’s in your cup, an attentive third wave barista will be all too happy to tell you what’s in their brew and what flavor notes to look for when they serve up your cup.
