Cochinillo (asado) originated in Spain, where weeks-old piglets are cooked inside wood ovens, very similar to the way we cook lechon. After the piglet is cooked, it’s a tradition to cut the cochinillo using a plate to prove its crispiness and tenderness! Boss Cochinillo is here to show who the real boss is when it comes to cooking cochinillos! They roast the pigs for up to three hours to ensure that the meat is crispy on the outside yet tender on the inside.
