Cav will take your wine night to a whole other level.
Cav Wine Shop & Cafe was among the first wave of restaurants that opened in Bonifacio High Street area back in 2008. In a span of 8 years, many have closed down while others have relocated.
But all thanks to Cav’s commitment in pursuing excellence in food, service and providing a great dining experience, it continues to strive in a fast-paced industry where longevity has been proven to be a challenge.
Cav is short for the French term cave, which means “wine cellar”, which perfectly describes Cav’s wild wine collection covering 500 different bottles from all over the world.
One of the highlights when dining at Cav is its Enomatic Machine, which is a unique wine dispenser that allows prospective customers to try different bottles before deciding which to buy– either to take home or to pair with the restaurant’s dishes.
Cav is also well known for its tastefully designed interiors, which should come as no surprise. One of the other owners of Cav actually runs Mos Design, an upscale furniture store and gallery located just around the corner.
Under the guiding hand of head chef and owner Chef Markus Gfeller, Cav offers modern European cuisine–with French, German and Italian influences.
Here are some recommended dishes to make your exquisite dining experience at Cav worth it. Begin your wine night with appetizing starters and wine snacks.
Italian Burrata & Salsa Verde Salad
Made with candied tomato and herbal virgin oil
Beef Tartare
Premium raw marinated beef with watercress and homemade chips
Artisan Cheese Platter
3 kinds of cheese, condiments and bread
Portobello Tart
Flaky flat bread with grilled portobello, arugula and goat cheese
TIP: Wine and cheese are traditionally paired together. Cav's servers are well trained and will be glad to help you decide which to pick in case you're not sure.
Guests have the option of ordering set courses for their meals. If you’re looking for the full Cav experience, some of these set courses even pair dishes with complementary wines.
Black Cod
Lamb Ragu & Saffron
Tagliatelle with tomato confit
Diver Scallops & Baby Squid
Black spaghettini, pork crackling, pimiento, saffron
Mulwarra Beef Tenderloin
Coriander granola, young veggies, potato puree, beurre rouge
There’s a whole category of wines that are made with grapes that aren’t completely fermented, resulting in a sweeter taste. These are called dessert wines and, as the name suggests, are best consumed with desserts.
Davao Pomelo Sherbet
Pomelo petals, ricotta, muscovado crumble
Baguio Strawberries
Ganache kisses, meringue, peppermint sherbet
Of course, Cav’s menu changes frequently depending on seasonality. Guest chefs also come in and showcase special menus from time to time. The end result is that you’ll never know for sure what to expect when you eat here, aside from consistently high quality, attention to detail and great wine.
