Whether or not you follow the foodiverse of chefs and food critics, the name Anthony Bourdain has been in circulation since the recent World Street Food Congress held in Manila.
This was not Bourdain’s first time in the country; he visited the Philippines back in 2009 to film an episode for No Reservations. In the episode, Bourdain gets his first real taste of Filipino foods like kare-kare, lechon, halo-halo and Chickenjoy but the real winner for him was sisig.
In an interview with CNN Philippines, Bourdain praises sisig even more. “It’s hot, sizzling, crispy, sticky, delicious bits of pork with many textures… It’s exactly what you need after a few beers and that’s a perfect food,” he says.
“I think sisig is perfectly positioned to win the hearts and minds of the world as a whole.”
Bourdain Market, a New York street market of his making, is set to open in 2019. One of the dishes that will be sold there is—you guessed it—sisig.
