Aligue or crab fat are those glorious yellow-orange streams of roe you see after cracking open a crab. It’s packed with generous amount of flavors including cholesterol, so do eat in moderation!

Some restaurants have been getting creative in using aligue to add unique twists to some of their dishes. Serve us shrimps or scallops tossed in aligue, or even just a plain shell full of crab fat and we’ll love you forever.
