Ah, adobo, one of the crown jewels of our beloved country. One whiff of the powerful scent stirs up memories of being called down to the dinner table because of the stewing smell of adobo. Its rich, Pinoy flavor gives the dish enough hold for us to call it a Filipino staple, but the nostalgia behind the simple recipe makes it one of the greats.]

You can never get tired of this classic ulam. It is, however, always a pleasant surprise when someone puts a spin on the dish we all grew up with.

Adobo sa Pula – Alab

Alab serves authentic home-cooked Filipino dishes. Alab attempts to express a clear narrative of what Filipino cuisine is, amidst all the confusion of the Filipino fusion food trend. Chicken and pork stewed in vinegar, one of the oldest documented versions of the classic adobo. It uses annatto for color instead of soy sauce.
